Spinach Salad with Castelvetrano Olives and Lemon

PREPARATION INSTRUCTIONS:

  • For the best version of this salad, assemble on a platter. Spinach leaves don’t love to be tossed with vinaigrette (the fibers tend to break down in mature spinach like this, so you’ll end up with a bunch of droopy leaves if you just toss everything in a bowl).
  • Put down a small layer of spinach on a platter, spoon a bit of castelvetrano dressing over the leaves followed by a sprinkle of parmesan. Repeat layering until you’ve run out of all of the olive dressing and cheese. If your salad looks a little dry, drizzle the lemon vinaigrette over the salad. Sprinkle breadcrumbs over everything and serve!
