Baked Cauliflower w/ Feta Farro & Scallions

PREPARATION INSTRUCTIONS:

  • Remove lid from tray. Bake at 375 degrees for 30-45 minutes. The top should be a dark golden brown and the casserole should be fully warmed through. 
  • If after 45 minutes the casserole still doesn’t feel warm (165 degrees at least), cover the pan loosely with tin foil or the lid it came with, and bake for another 15 minutes.
  • Allow to rest at least 10 minutes before serving. Garnish the tray with caper and parsley relish before digging in.
