PREPARATION INSTRUCTIONS:
- For the best version of this salad, assemble on a platter. Spinach leaves don’t love to be tossed with vinaigrette (the fibers tend to break down in mature spinach like this, so you’ll end up with a bunch of droopy leaves if you just toss everything in a bowl).
- Put down a small layer of spinach on a platter, spoon a bit of spring dressing over the leaves followed by radishes, capers and a sprinkle of parmesan. Repeat layering until you’ve run out of all of the dressing, radishes and cheese. Sprinkle breadcrumbs over everything and serve!
