Whole Cauliflower “Shwarma” with Herbed Yogurt and Radishes

Whole Cauliflower Shawarma

PREPARATION INSTRUCTIONS:

  • First, take everything out of the fridge! Ideally, you want everything for this dinner at room temperature or warmer.
  • Working from the rounded top, down to the flat bottom end, cut cauliflower into 4 pieces. Bake in a 350 degree oven for about 15-20 minutes (or until fully warmed)
  • Meanwhile, toss herb mix, radishes, and chickpeas with lemon vinaigrette.
  • Assemble a serving platter by first spreading the herbed yogurt on a plate. Top with roasted cauliflower. Season the cauliflower with a little salt (if you have it on hand). Scatter the herb, chickpea, and radish salad over cauliflower. Serve!
