Guajillo & Citrus Chicken Tostadas

PREPARATION INSTRUCTIONS:

  • Chicken is best warmed in a saucepan over medium low heat. 
  • Pinto beans are best warmed in a saucepan over medium low heat or in the microwave.
  • Tostada shells are best warmed in a 350 degree oven for 2-5 minutes.
  • Assemble tostadas with pinto beans and chicken. Top with chopped cilantro, salsa roja, radishes (water drained off), pickled fresno chilies, and pumpkin seed dukkah. Squeeze a lime over everything and serve!

INGREDIENTS: tostadas (corn flour, water, salt),  guajillo and citrus chicken (chicken, onion, garlic, chipotle chilies, guajillo chillies, salt, pepper, vinegar, olive oil, oregano, paprika, fish sauce, lime juice) pinto beans, salsa roja (guajillo chili, chipotle chili, vinegar, garlic, lime juice, salt, pepper), south wind produce espelette chilies, cilantro, lime, radishes ALLERGENS: soy, sesame
