PREPARATION INSTRUCTIONS:
- Split english muffins in half either with a fork (carefully - to maximize nooks and crannies) or a knife. Toast at 375 degrees for 4-6 minutes (or until golden brown).
- Bake chicken at 350 degrees for 15-20 minutes, or until fully warmed through.
- Sauteed greens can be warmed either with the chicken (add them to the pan about 6 minutes after you put the chicken in the oven), or in a saucepan over medium heat.
- Mushroom gravy is best warmed either in the microwave, or in a saucepan over medium heat.
- To assemble, top english muffins with pimento cheese, chicken, sauteed greens, and mushroom gravy. You can either assemble this dinner as a sandwich, or a knife and fork dish by spooning some more of the mushroom gravy on top of the muffins. Serve with as much smoked hot sauce as you’d like.
