Kuri Squash and Pinto Bean Tostadas

PREPARATION INSTRUCTIONS:

  • Squash is best warmed in a 350 degree oven for 15-20 minutes.
  • Pinto beans are best warmed in a saucepan over medium low heat or in the microwave.
  • Tostada shells are best warmed in a 350 degree oven for 2-5 minutes.
  • Assemble tostadas with pinto beans and squash. Top with chopped cilantro, salsa roja, radishes (water drained off), pickled espelette chilies, and pumpkin seed   dukkah. Squeeze a lime over everything and serve!
