Red Lentil Chorizo with Potato Fritters

Red Lentil "Chorizo" w/ Potato Fritters

PREPARATION INSTRUCTIONS:

  • Lentil chorizo is best warmed in a saucepan over medium low heat. This may seem fairly thick when cold, but it will thin as it warms. Alternatively, it also fares well warmed in the microwave.
  • Potato fritters are fully cooked. Bake uncovered at 375 degrees for about 15-20 minutes to warm.
  • To serve, first spread the salsa verde on the plate. Top with potato fritters, and then spoon the red lentil chorizo over everything. Drain the water off the radishes and scatter over the platter. Scatter pumpkin seed dukkah over everything. Squeeze a bit of lime juice over the herbs, toss and scatter them over the platter. Squeeze the rest of the lime over the plate and serve!
